Is it actually true that carbs make you fat?
I've seen a few nutritionists' opinion that the body is basically lazy... at least about how it metabolizes. It'll do the "easy" digestibles first, and the 'hard' ones..... later.... or put them away for even later, if they aren't immediately required. So the logic goes... if you're active, or working hard, or ie in a cold climate... a "higher" fat-load in a diet isn't necessarily a bad thing, because its easy for the body to metabolize and use right away. Not so for carbohydrates -- if the body doesn't need the energy right away, right now... those carbs will be converted and stored... as fat, so that it is easily available when it really is required -- but you better make sure you get active, or it'll be stored forever! I see a lot of drivers and athletes carb-loading before a competition, and I think they're really just using their own bodies as graineries... and no doubt there will come a time when their metabolism will go to the "carb-bank" and withdraw all the reserves that are available... but you and I on the street don't ever get into the same energy-requirement territory that elite athletes do. So in my house, the rice / pasta / potatoes are on the "bad" list... I am struggling to fill in the diet, because those are things that taste GOOD, and are adored by... well, kids in particular, but everyone in general.
Has anyone else got views on the fats/carbs debate? Strategies for diet change?

As a rule; if you eat little and often (6 meals a day) you should combine carbohydrates, protein and fibre in all meals. By eating 6 times a day your body does not go into the save calories mode that dieting brings on and your metabolic rate will increase thereby burning off calories. It is important to eat within an hour of getting up as this sets the metabolism process going. It works for me. If you want to lose body fat then go on a protein only diet for 3 or 4 weeks and again eat little and often.

I find the rice and pasta to be excellent and not fat building at all, and I am not exceedingly active. I would think the key is to not have your pasta with a bunch of sauce, but just make it with vegetables and some olive oil. Same goes for the rice.
Since the beginning of the year I changed a bit my eating habits and began doing some more exercise (all for the go-karting!). The goal was to get rid of useless fat, and build up some muscles. I have continued to eat lots of rice and pasta, but done away with all the fat such as butter, cream etc. The result was very good as I ended up losing around 10kg, and my strenght and endurance was considerably improved. Certainly paid of for the go-karting as I had ti add balast to reach the minimum weight, and I was perfectly fresh at the end of each race, often gaining positions in the last few laps.
So, I think if you lead a normally active life, doing some regular physical activity, the carbohydrates will only do you good.

Be carefull of diets that prescribe high fibre- low carbohydrates. Whereas it is true you can lose weight using that method- the acidity of your blood raises through breaking down the peptide bonds between amino acids (I won't go through the Chemistry involved- because quite frankly I don't remember... I don't have to remember it for a final exam anymore!!! )... Anyhow- you end up building up these things called Ketone bodies. You can do long term harm to your kidneys and liver- you're more prone to get sick- you'll have less energy- and unless you stay on that diet you'll be more likely than average to gain the fat back... Thus- Dr Atkins is a quack- and medical science knows it! I'm waiting for him to get landed in a major lawsuit when someones kidneys fail that follows his diet... Now- your body will treat different carbohydrates differently. From what I recall- carbohydrates that are made primarily of glucose can be broke down easier (and thus convert to less fat) than carbohydrates that are built from other sugars. Just don't ask me which carbohydrates are made of glucose- because I don't remember!!!

I am the CARB junky. My girlfreind always yells at me to order something else becuase i am so bad. Man i eat two kinds of potatos and move on to more carbs. I agree carbs put on pounds, but i am so active it never gets me. One day though i will find trouble, lets hope i don't end up 250pounds

I follow a 4 meals a day 'diet' yogurt and muesli inthe morning, then some fruit a bout 4 hours later. For lunch a proper meal with cookd veggies and food containing long and short chain fats, not red meat. and then anything in the fridge for supper.
I tend to eat lots of food with relatively low carbohydrates and high in short chain fats. carbohydrates and unused protein gets stored as fat, short cahin fats usually gets burned first during exercise.
woks for me, keeps my weight down and when the MTB season starts it's easy to get down to race weight because theres not a lot of stored long chain fats which are hard to get rid of.
In short carbohydrates are good but only in moderat amounts. Foods containing short chain fats like animal fats found in raw fish, are good for you.
Carboloading is a practise i don't subscribe to. For it to be effective you have deplete all carb reserves andthen cram the body full of carbohydrates in a short time i.e 2 to 3 day before your event. A very stressful practise.
Wanna loose weight. Weigh your food and count the calories in what you're eating and just make sure that burn more than you take in.

I think he gets it from fark.com LOL 30 30 40 rule has always worked for me and is well balanced, eating small and often stabilises the blood sugars.
